Bajre ki Khichdi : Recipe

Pearl Millet or Bajra is also known as Sajja (In telugu), Sajje (In Kannada) or Kambu (In Tamil). Bajra is rich in essential compounds like protein, fibre, phosphorous, magnesium and iron. Pearl millet is very powerful in controlling diabetes. Because of its high fibre content, it tends to digest slowly and release glucose at a slower rate as compared to other foods. It contains phytic acid believed to increase cholesterol metabolism. It also stabilizes the level of cholesterol in the body. Bajra is rich in insoluble fibre that aids digestion. It also reduces secretion of bile acids and is linked to a lowered risk of gallstone formation.

Bajre ki khichdi

Ingredients for Bajre ki Khichdi: 

  • 1 cup bajra (black millet) , soaked or 8 hours and drained
  • 1 cup yellow dhuli moong dal (split yellow gram) , washed and drained
  • 3 tbsp ghee
  • 1 tsp cumin seeds (jeera)
  • 1/2 tsp turmeric powder (haldi)
  • 1/4 tsp asafoetida (hing)
  • 2 chillis
  • 2 medium size onions
  • salt to taste

Steps for preparing Bajre ki Khichdi

  1. Soak bajra in water for 9 to 10 hours

  2. Drain the water and toss to remove any removable husk from the bajra

  3. Wash and drain the moong dal

  4. Chop chillies, onion and any other vegetables of your choice like peas, beans, carrots, potato etc.

Steps for cooking Bajre ki Khichdi

  1. In a pressure cooker heat 3 tablespoons of clarified ghee

  2. In the hot ghee now put cumin seeds, asafoetida, chillies and onion

  3. Stir ghee on low flame till cumin seeds and onions turn slightly brown

  4. Now add the soaked bajra along with the washed moong dal in the pressure cooker

  5. Add Turmeric powder and salt

  6. Mix the ingredients in the pressure cooker

  7. Close the lid of pressure cooker and on medium flame pressure cook till 4 whistles.

  8. On the side you may cook the chopped vegetables of your choice in a pan or wok by heating 1 tbsp of ghee and adding the vegetables in it. Cook for a 5 minutes.

  9. After 4 whistles, pressure cook on low flame for 15 minutes.

  10. Get the pressure cooker off the flame and let it cool for a few minutes before opening the lid of the cooker.

  11. Add the cooked vegetables in the cooker and slowly cook the mix of bajra khichdi and vegetables on low flame for a minute

  12. Nutritious Bajra Khichdi is ready to be served.
